Your Love Affair With Choc Chip Cookies Starts Here
I have been poking around my recipe archives and came across this chocolate chip cookie recipe. It was so popular in our home. I can’t believe that I had forgotten about it! When a toddler was in the house, I baked these regularly because chocolate chip cookies were a favourite. We would buy so many from the bakery section at the supermarket. It was ridiculous! As our eating habits changed and we developed a healthier relationship with food, finding cookies that weren’t filled with nasties became challenging. So we took to the kitchen, and after much ‘toddler testing’, we came up with what we call the ‘Choc Chip Cookie Monster Recipe’.
What you need
1 cup Almond Meal
1 cup Oats
¼ cup Coconut Oil
3 Tbsps Pure Maple Syrup
¼ tsp Sea Salt
½tsp Baking Powder
2 tsp Vanilla Extract
150g Chocolate Chips
What you need to do
Preheat the oven to 160°C
Blitz the oats until they have a ’flour’ like texture.
In a medium bowl, whisk together the almond meal, oats, salt, and baking powder, then add the coconut oil, maple syrup and vanilla extract. Mix well until all the ingredients are wet.
Fold in the chocolate chips. Using a rounded tablespoon, scoop up the batter and then roll it into balls. Drop the cookie batter onto a baking pan lined with baking paper.
Bake for 12 – 15 minutes or until the edges are golden brown.
Allow the cookies to cool on the baking pan. You can eat them while they are warm, be mindful that the melted chocolate chips are hot! I prefer the taste and texture once they are at room temperature.
Sometimes we traded the oats for almond meal or blitzed up some macadamia nuts and did 1 cup of almond meal and 1 cup of macadamia nuts. If you use macadamia nuts, add a couple more minutes to the cooking time.
This recipe has taken me down memory lane and reminded me of how much fun I had baking with a toddler. Not the clean-up after, though. Ha ha! There is something fun and cheeky about the choc chip cookie, so I hope you get as much enjoyment from baking these as we did.
